Make delicious, creamy mayonnaise with just three ingredients

Grocery shopping is no longer the simple task it used to be.

Now, you need protective clothing, plenty of time to allow for extra queueing, and half of what you want might not even be on the shelves.

So, with plenty more time at home, many of us are trying our hand at home baking, cooking and making things from scratch.

It might surprise you to realise just how easy and quick it is to make your own mayonnaise. You can make it with three ingredients, and it will be just as delicious as your favourite brand, with none of the preservatives and only costing a fraction of the price.

Why not whip up a little jar of homemade mayo to liven up your working from home lunches, or dollop it in a tuna pasta bake for a quick, tasty dinner.

This recipe will make you enough to fill a small jar, so if you want more – just double everything up.


1 egg

220ml vegetable oil

1 tbsp lemon juice/or white wine vinegar

1/4 tsp salt (to taste)


It couldn’t be simpler.

Put all of the ingredients into a tall, narrow container – like a jug.

Insert a handblender into the mixture and turn it on to the highest setting.

Whizz everything together and within ten seconds it will start to look like mayonnaise.

Keep going until all the oil has turned white and creamy and the mixture feels thick. It is done when you can tip the jug upside down without any of the mayonnaise falling out (do this very carefully).

Keep it in an air-tight jar in the fridge, and you need to use it within one week. Which is why it is best not to make too much in one go.
